Home-made porridge is wholesome. It has three times the amount of nutrients when compared to other packaged cereals, which are sometimes processed and contains a lot of sugar. Spices are often used to enhance the taste of a bowl of porridge. Cinnamon leaves or sticks, nutmeg, and vanilla.
N.B. Some people use sugar and sweetened condensed milk to sweeten their porridge. But you can use raisins instead of sugar. However, I do not like raisins so I used just sweetened condensed milk and no sugar
8 fingers green bananas
4 cups water
1 teaspoon nutmeg
1 teaspoon vanilla
1 sachet skimmed milk powder
Sweetened condensed milk ( the amount is up to you)
Salt to taste
3 cinnamon leaves with stick
Pour two cups water in a pot. Wash cinnamon leaves and put in pot. Allow it to boil for five minutes.
Peel green bananas.
Wash then dice them
Pour two cups water in blender. Add diced diced green bananas, blend until it looks like a smooth paste.
Blended green bananas should look like this.
Add blended bananas mixture to pot with cinnamon stick. Add salt to taste. Stir, cover and allow to simmer. Stir porridge every two minutes. Mix coconut powder with small amount water, add to pot with porridge.
The porridge should now look like this. Stir vigorously, lower the heat and simmer for 15-20 minutes. Mix skimmed milk powder with small amount water and add to pot.
Porridge should look like this. Add vanilla, nutmeg and sweeten with condensed milk to suit your taste. Add more salt if needed. Simmer for five more minutes.
I like the smell of vanilla so I added some more to my bowl of porridge (but that's optional) Serve hot. Cooking takes about 30 minutes if not less. Serve hot!
I had it with steamed callaloo, boiled eggs (it's funny, but I do not eat the egg yolk. It has nothing to do with the fact that it is jam-packed with cholesterol, I just don't like the taste) and fried plantains.
Note: If porridge is too thick you can add small amount water. Do not use corn starch or flour for thickening agents. Practice to boiled thick porridge naturally.
N.B. The cooking time might seem long for some of my recipes, but it isn't. Furthermore, par-boiled food gives me indigestion, if I can goes to work and deals with meetings e.t.c., then come home and cook, well I guess it isn't hard after all.
