2 lbs. pork skin ( hair removed,washed)
2 tablespoon vegetable oil
Cut pork skin into small pieces. In a saucepan add oil to heat over low heat. Add pork skin and fry until crisp. Remove from frying pan. Sprinkle with salt to serve. However, it can be served also with steamed callaloo, steamed cabbage (without the carrot)and cooked ackee (without the salted fish).
Another method is to add fried pork skin in a deep bottomed pot with 1/4 cup water, scallion, hot pepper, and chopped tomato. Allow to simmer until gravy reduced to your desire portion. Remove from heat and serve.
