Bammy is a flat bread made from cassava.
2 lbs. cassava
1/2 teaspoon salt
Remove the skin from cassava. Use a grater to grate cassava then squeeze out the juice through cheese cloth. Discard the juice. Mix in the salt with the cassava. Lightly brush a heavy skillet with oil then pour the cassava mixture on the skillet, using the back of a spoon to press down the mixture.
Place the skillet on medium heat and cook 5-10 to minutes, then turn and cook on the other side for 5-10 minutes. Remove bammy from skillet and serve.
Use kitchen grater to grate cassava. Do not use a food processor, the cassava will become mushy.
