It's tamarind season in Jamaica and I already wet my appetite on some gud (good) ole (old) tamarind balls. Based on the exhibits you can tell that my creativity in tamarind making is well versatile.
2 dozen tamarinds, shelled
1 cup brown sugar
Add brown sugar and 1/8 tsp. of white rum (rum is optional)
Mix tamarinds and sugar
Using the palm of both hands to roll the tamarinds into ball shape.
Roll each ball into brown sugar (optional)
