Breadfruit can be roasted either on the stove top, using a coal stove or bake in the oven. I prefer when the breadfruit is a bit ripe or 'turn' as we say in Jamaica.
1 large half-ripe breadfruits
1 tablespoon vegetable oil
Preheat your oven to 350F. Remove the stem from breadfruit and allow the stain to drain until it stops. Wash or wipe breadfruit clean. Place in the sun or use a clean dish towel to pad dry. Use a knife to make a cross at the top and bottom of the breadfruit. ( this will allow the steam to escape while baking)
Oil the entire breadfruit. Bake in a greased baking sheet for 1 1/2 hour to 2 hours. Remove from oven and allow to be cool. Peel and remove the centre core. slice thinly and serve with ackee and salt fish (codfish) for breakfast.
Leftovers breadfruit can be deep-fried and sprinkled with salt
