This is how I cook bacon Jamaican style. This is a Jamaican Sunday morning breakfast dish. This is a easy breakfast ideas. More Jamaican Breakfast ideas here.

Buy bacon that has fewer fats.

To prevent bacon strips from curling too much, use a fork to prick each pieces.

Ingredients
1 pk. bacon (225g or 7 ounces)Buy bacon that has fewer fats
1 tsp. vegetable oil
1/2 tsp. black pepper
1 tsp. ketchup (optional)
2 slices onion
1 slice yellow sweet pepper
1 slice red sweet pepper
1 slice hot pepper
4 tbsp. water

Method
Step1
Cut or neatly tear each bacon strip into 3 or 4 pieces.To prevent bacon strips from curling too much, use a fork to prick each pieces.
Step2
Put a skillet or Dutch with the oil on low heat. Sauté the hot pepper, sweet peppers and onion until translucent.Add the bacon pieces and sprinkle on the black pepper. Gently stir. Add the water and ketchup.(I added a little water to get gravy) Cover the pot and simmer  bacon for a minute. Remove from heat and serve warm.

This is ideal with fried dumplings, fried ripe plantain and a cup of hot mint tea.
