Fried boiled dumpling is a quick and easy Jamaican breakfast. Overnight left-over boiled dumplings are best use. The previous night for dinner, I prepared boiled dumplings and steamed fish, so I used the left-over dumplings from dinner for my breakfast. To compliment the fried dumplings, I also fry 1 frankfurter and half of 1 medium-size ripe plantain. The boiled dumplings should be cool completely and put in the refrigerator overnight. Jamaicans use left-overs for breakfast, here is another example, overnight French fried chicken and brown-stewed fish.
2 tbsp. vegetable oil
Cut each dumpling into halves. Put a Dutch pot or skillet on medium heat with oil. Fry each side of the dumpling for about 1 minute or until lightly brown. Drain on paper towel to get rid of excess oil. Best eaten when hot.
