I called eggplant garden egg. Garden egg cooked together with salt fish (codfish), add tomato, onion and hot pepper.
5 medium-size garden egg, washed/peeled/sliced
1 medium-size ripe tomato, sliced
Few slices onion
2 slices hot pepper
A small piece of salt (soak or boil salt fish for 5 minutes to remove excess salt), then skin, debone and flake salt fish.
2 tsp. coconut oil
1 tsp. black pepper
1/8 cup of water
1 tsp. all-purpose
Put a medium-size pot on medium heat, add the oil. Sauté the tomato, onion and hot pepper in hot oil until translucent. Meanwhile, in a small bowl, season the sliced garden egg with black pepper and all-purpose. add to the pot, add the water and salt fish. Cover the pot and simmer until garden egg becomes soft (about 4 minutes)
Add ketchup, stir gently. Cover pot for another 2 minutes more. Remove from heat and serve warm.
