Jamaican carrot punch

Enjoy this punch anytime of the day. Carrot punch is made with carrots, sweeten with condensed milk, add vanilla, rum (optional) and nutmeg.

9 large carrots, remove tops and tips, scraped, washed
3 cups water
Sweetened condensed milk
1 tsp. vanilla
1/2 tsp. nutmeg
1/4 cup almond milk (optional)
1 shot of white rum (optional)

Method
Cut each carrot into 4 or 5 pieces
Put to boil in 3 cups of water on high heat until fork tender (Do not over boiled the carrot it will lose flavour and most of its nutrients)
After carrots are cooked put aside to be cooled and also reserve the water.
Place carrot into a blender along with the water. Blend until smooth.
Strain through a fine sieve strainer
Add  condensed milk, vanilla, almond milk   rum (if using) and nutmeg. Give it a final blend for about a minute or so.
Serve over ice and enjoy
