How to season chicken Jamaican style whether for brown stewed, curried, baked, deep fried, jerked, and barbecued . For barbecuing and jerking chicken, add a tsp. of grated nutmeg, 1 tsp. of ground chilli powder and a tsp. of ground pimento or freshly crushed pimento.
Before seasoning the chicken, you should wash the chicken with either lime, lemon or vinegar it is very important because it gets rid of the slime on the chicken.
You can leave the skin on the chicken, however, trim away the fats. If you choose to leave the skin on, make sure to wash way the slime that are under the skin of the chicken
Remove the skin from the chicken (optional)
Wash chicken with lime or lemon or vinegar. This will get rid of the slime. Drain excess water. I normally leave the chicken to drain on the sink top, so that the water can run down the drain. Make sure to clean the sink with bleach after. I dislike seasoning my meat when water is settled at the bottom of the container. Therefore, I always drain the meat at least for 10 minutes before seasoning it.
Put chicken into a container and season with the following:
This is to season two pounds of chicken, if you are cooking more than two pounds; use 1/2 tsp.more of everything, except the salt
1 tsp. paprika
1 tsp. ground black pepper
1 tsp. salt
1 tsp. Maggie chicken season
1 tsp. Maggie all purpose
1 tsp. Island jerk seasoning
1 tsp. Island Spice Red Pepper Cayena
Season chicken with these herbs and spices:
1 stalk scallion, chopped
1 sprig thyme, chopped
Few slices hot pepper
1 tomato, sliced
1 clove garlic, crushed
1 small onion, sliced
If you are not using the chicken the same day, put into the freezer in a Ziploc bag. Do not season the chicken with the scallion, thyme, onion, garlic and hot pepper, if you are not using it the same day because the coldness of the freezer will weaken the strength of these herbs.
Put seasoned chicken into a Ziploc, then place in the freezer until ready to use
It is also very important for you to know that chicken should be marinated in the refrigerator for no longer than two days.
On the day that you will be using the chicken, remove frozen chicken from the freezer. Then remove chicken from Ziploc bag; put into a container. Place the container at the bottom section of the fridge and let it thaw. As soon as the chicken is thawed, Add the scallion, thyme, tomato, onion, garlic and hot pepper to the chicken at least 10 minutes before cooking the chicken.
