What's better than a bowl of hot steaming shrimp vegetable soup to warm my inside on this cold rainy evening? Shrimp vegetable soup is easy to prepare and is full of flavour and deliciousness.
This amount of shrimps cost $800 JMD Its about twenty-five tiny shrimps as you can see.
1/4 lb. pumpkin
1 small turnip
2 Irish potatoes
1 cock soup mix
3 cups water
Salt to taste
25 small shrimps (shelled, deveined, washed)
1 stalk escallion
Piece of fresh thyme
1 clove garlic (optional)
1 green whole hot pepper

Peel carrots, pumpkin, turnip and Irish potatoes. Put vegetables and garlic into a pot with two cups of water
Cook vegetables on medium heat until fork tender.
Meanwhile, the vegetables are boiling. Use the back of a spoon and crush the escallion; this is to release the oil that is in the escallion
When the vegetables are partially cook, add one more cup of water. Add the escallion, thyme and hot pepper as well. Cover pot and allow the flavours from the scallion, thyme and hot pepper to be infuse into the pot
When the vegetables are cooked, add the shrimps and cock soup mix. Stir. Add salt if needed. Cover pot and simmer soup on low heat for ten more minutes.
Remove from heat and serve hot.
