Carrot pineapple ginger drink is one of my favourite drinks. It is light and refreshing, and you should try it. I use a small amount of granulated sugar to sweeten. However, you can use honey if you prefer.
10 carrots, wash/peeled/remove head and tip/ cut into small pieces
2 lbs. pineapple, peeled/cut into small pieces
Piece of ginger root
Sugar to sweeten
3 cups water
In a blender, add some of the carrot and pineapple along with 1 1/2 cups of water, blend until smooth. Pour mixture into a large container.
Blend the remaining carrots and pineapple in 1 1/2 cups of water. Pour into the same container as the first batch
Strain the carrots and pineapple mixture through a cheese cloth into another container and set aside.
Wash and blend the ginger into 1/4 cup of water then strain through a cheese cloth into the carrot drink.
Sweeten with granulated sugar or honey.
Put to chilled or serve with ice.
