Jamaican French Fried Chicken Breast

My Jamaican French fried chicken breast is well seasoned down to the bone, as we say in Jamaica. I used various spices, and these spices make the chicken so very flavourful. I used a mixture of all-purpose flour, baking powder and cornstarch to coat the chicken breasts before frying them. I used some finely chopped fresh seasonings, which gave the chicken a spicy Jamaican flavour. This chicken is soft on the inside and crunchy on the outside

Ingredients
6 chicken breasts/cut into 3 or 4 pieces; depending on the length of each breast
2 tbsp. Grace fish and meat sauce

To add a spicy flavour (not overly spicy)
Finely chopped the following:
1 stalk escallion
1 small onion
1 hot pepper
1 clove garlic

Spices that I used:
1 tsp. of the following:
Maggie all-purpose
Maggie chicken season
ground tarragon
paprika
ground chilli
ground black pepper
1 tsp. salt

I also use:
1/4 cup vegetable oil

To make coating:
1 1/2 cups all-purpose flour
2 tsp. baking powder
2 tsp. cornstarch

Method

Put chicken breasts into a container and season with all the ingredients, except for the oil and coating mixture. Cover and marinate in the fridge for at least 2 hrs. (optional)

Put a cast-iron skillet or thick Bottom Dutch pot on medium heat and add the oil, then allow the oil to become hot.

In the meantime, coat a couple of pieces of chicken breasts into the flour mixture and set aside. As soon as the oil becomes hot, add the chicken breasts and fry for a total of 10 minutes; turning twice within the 10 minutes.

Remove fried chicken from pot and drain on paper towel or a baking rack. Continue frying all the chicken breasts into batches until all have been fried.
