French fries (called fried chips or chips in Jamaica) seem to be the classic "bad for you food." They are delicious when fried but baking them in the oven can be equally delicious, and you'll get a crisp result as well.
Note: To make crisp and brown French fries in the oven, you have to make sure the potato sticks are arranged in a single, even layer on the cookie sheet or in a roasting pan
2 cups potato sticks
Season sparingly with:
ground black pepper
Island Spice Red pepper Cayena (use paprika instead, if this ingredient is not available to you)
Preheat oven to 425 F or 220 C
In a container, combine all ingredients; turn over until potato sticks are evenly coated with mixture.
In a roasting pan or cookie sheet, spread a single layer of potato sticks.
Bake in oven for 30 minutes or until fries are browned. Turn over once during cooking
