How to marinate chicken for jerking

Make Jamaican dry jerk rub by combining, ground pimento, cinnamon, all-purpose, chicken seasoning, paprika, black pepper, escallion, thyme, garlic, onion and hot pepper

Rub-on  seasonings are a form of dry marinade. Mixtures of spices are hand rubbed directly onto the chicken and then allowed to marinate in the fridge for at least 12 hours.

Ingredients

1 tsp. of the following

All-purpose

Chicken seasoning

Ground pimento

Black pepper

Paprika

Cinnamon powder

Herbs

1 stalk escallion, minced

Piece of fresh thyme, remove leaves, discard stems

1 Scotch bonnet pepper, minced

1 small white onion, minced

1 clove garlic, minced

Method

Combine all ingredients in a small bowl and set aside

Prepare chicken

1 whole chicken, cleaned and quartered. Wash chicken with lime and rinse with water. Pat dry chicken with paper towel

Rub the chicken with the jerk seasoning and stuff the jerk seasoning between the skin and the meat. Place the chicken pieces into a storage pan and let marinade overnight (at least 12 hours) in the fridge
