Jamaican Bulla Cake Recipe
Ingredients
1 pounds Brown Sugar
1⁄2 tablespoon Salt
1 cup Water
4 tablespoons Ginger (grated)
8 Margarine (Melted)
2 tablespoons Vanilla Essence
1 lb. Counter Flour
3 tablespoons Baking Powder
1/2 tablespoon Baking Soda
1 teaspoon Nutmeg
8 ounces Counter Flour (For Rolling Out Bulla)
Method
Add sugar and salt to water, allow it to dissolve. Use about 1/4 cup of the liquid mixture to blend the ginger. Melt margarine and add the blended mixture and vanilla. In a bowl, sieve flour, baking powder, and baking soda. Add liquid slowly while stirring, add salt, sugar and vanilla and stir, the dough must be clammy and heavy. Use 8 oz. flour to flour the board, place dough on floured board and knead until dough become manageable
Roll dough out with a thickness of 70-75cm and cut into slices of about 3" or 4" in diameter (you can use a cookie cutter to cut into circles) Bake at 180C or 350F for about 20-25 minutes or more if needed.
