Ingredients:

1 pound brown sugar

½ tablespoon salt

1 cup water

4 tablespoons grated ginger

8 tablespoons margarine (melted)

2 tablespoons vanilla essence

1 pound counter flour

3 tablespoons baking powder
-
½ tablespoon baking soda
-
1 teaspoon nutmeg
-
8 ounces counter flour (for rolling out the dough)
Method:

Add the brown sugar and salt to the water and stir until dissolved.

Use about ¼ cup of the sugar-water mixture to blend the grated ginger.

Melt the margarine, then combine it with the blended ginger mixture and vanilla essence.

In a large bowl, sift the 1 pound of flour, baking powder, and baking soda together.

Gradually add the liquid mixture into the dry ingredients while stirring. Add the remaining sugar-water and vanilla mixture.

Stir until a clammy and heavy dough forms.

Flour a board with the additional 8 ounces of flour. Place the dough on the floured surface and knead until the dough becomes manageable and smooth.

Roll out the dough to a thickness of about 70–75 mm.

Cut into 3–4 inch diameter circles (use a cookie cutter or a glass if needed).

Place the rounds onto a greased baking sheet.

Bake in a preheated oven at 180°C (350°F) for 20–25 minutes, or until baked through.
