Servings: 8-10 bullas

Ingredients:

  • 1 pound brown sugar

  • ½ tablespoon salt

  • 1 cup water

  • 4 tablespoons grated ginger

  • 8 tablespoons margarine (melted)

  • 2 tablespoons vanilla essence

  • 1 pound counter flour

  • 3 tablespoons baking powder

  • ½ tablespoon baking soda

  • 1 teaspoon nutmeg

  • 8 ounces counter flour (for rolling out the dough)


Method:

  1. Add the brown sugar and salt to the water and stir until dissolved.

  2. Use about ¼ cup of the sugar-water mixture to blend the grated ginger.

  3. Melt the margarine, then combine it with the blended ginger mixture and vanilla essence.

  4. In a large bowl, sift the 1 pound of flour, baking powder, and baking soda together.

  5. Gradually add the liquid mixture into the dry ingredients while stirring. Add the remaining sugar-water and vanilla mixture.

  6. Stir until a clammy and heavy dough forms.

  7. Flour a board with the additional 8 ounces of flour. Place the dough on the floured surface and knead until the dough becomes manageable and smooth.

  8. Roll out the dough to a thickness of about 70–75 mm.

  9. Cut into 3–4 inch diameter circles (use a cookie cutter or a glass if needed).

  10. Place the rounds onto a greased baking sheet.

  11. Bake in a preheated oven at 180°C (350°F) for 20–25 minutes, or until baked through.

  12. Allow to cool slightly before serving.


Notes:

  • Traditional Jamaican Bulla is slightly dense, rich, and filled with bold ginger flavor.

  • Best enjoyed warm with cheese or butter!
