Ingredients


2 lbs. cow kidney
Salt to taste
1 tablespoon black pepper
1 tablespoon food browning
1 tablespoon soy sauce
1 tablespoon paprika
1 onion (chopped
1 stalk scallion (chopped)
1 hot scotch bonnet pepper (seeds removed, chopped)
2 tablespoon cooking oil
1/2 cup cooking wine (optional)
2 cups boiling water
1 clove garlic (crushed)
2 tablespoon ketchup (optional)


Method

Remove fat and sacs from kidney. Place in a bowl with boiling water for two minutes, remove and cut kidney into bite sizes.

Season with onion, salt, black pepper, hot pepper, paprika, browning, soy sauce, scallion, thyme, and garlic.

Use hand to rub seasoning into kidney, cover and allow to marinate for one hour. Heat oil in skillet, place kidney with seasoning in hot oil, stir and cover allow to simmer for 20 minutes. (stirring occasionally) Pour in cooking wine (optional)(use water instead, 1/2 cup) stir and simmer for 15 more minutes. Add ketchup (optional) simmer for five more minutes. Careful not to over cooked kidney or liver, unless you enjoy eating it tough.
