Ingredients:

½ lb. red (pickled) herring

1 large tomato, chopped

½ Scotch bonnet pepper, chopped

1 small onion, chopped

½ teaspoon black pepper

2 tablespoons ketchup (optional)

1–2 tablespoons cooking oil
Method:

Soak the Herring:
Place the red herring in warm water and soak for about 10 minutes. Discard the water. -
Clean the Herring:
Remove the head, skin, and some of the bones. Flake the herring into small pieces with your hands. -
Cook the Seasonings:
Heat the oil in a saucepan. Add the chopped onion, tomato, and Scotch bonnet pepper. Sprinkle in the black pepper. -
Add Herring:
Stir everything together and add the flaked herring to the pan. Add ketchup if using (optional). -
Simmer:
Cover the saucepan and allow everything to simmer for about 1 minute. Remove from heat.
Serve hot with boiled dumplings, yam, ripe plantain, or cooked green bananas.
