Salt Fish And Ackee Seasoned Rice Recipe
Ingredients
1 doz. ackee (seeds removed, cleaned)
11/2 lb. rice washed, set aside)
1/4 lb. salt fish (cod fish)
1 cup coconut milk
1 stalk scallion (minced)
1/2 scotch bonnet pepper (seeds removed, minced)
1/2 onion (minced)
1 teaspoon black pepper
1 tablespoon margarine
Method
Soak salt fish in water for ten minutes then put to boil for another ten minutes to remove salt. Wash salt fish again with tap water and flake, then set aside. Put ackee to boil in water until tender. Add coconut milk, scallion, hot pepper, onion and black pepper to pot. Stir and allow to simmer over low flame for five minutes then add rice and margarine and stir. Cook rice over low heat, remove from heat and serve hot.
