Jamaican Baked Cornmeal Pudding
2 cups coconut milk
3 cups cornmeal
1/2 cup margarine
2 cups sugar (dark or granulated)
1/2 cup flour
1 teaspoon nutmeg
1 tablespoons cinnamon
Salt to taste
2 teaspoons vanilla
1/2 cup evaporated milk
Sift flour and cornmeal together in a bowl. Add all other ingredients and stir. Pour mixed ingredients in a greased baking tin and bake at 180C or 350F for one hour. Remove from oven, cool and serve.
Additional coconut milk can be added (when pudding is almost done) to ensure that the pudding is moist on top.
