Jamaican Fried-up Tin Mackerel

 

Jamaican tin mackerel

Ingredients

1 tin mackerel (your favourite brand)

1/2 small onion (chopped)

1/2 scotch bonnet pepper ( chopped with or without seeds)

1/2 teaspoon black pepper

1 tablespoon vegetable or Olive oil

1 tablespoon ketchup (optional)

Method

Add oil to frying pan then place over low heat. Sauté the onion, and hot pepper in hot oil for a minute or two then add the tin mackerel. Stir then sprinkle tin mackerel with black pepper then add the ketchup (optional) lightly stir and cover frying pot to allow the tin mackerel to simmer for a minute or two. Remove from heat and serve hot with cooked dumplings or fried festival for breakfast.
