Jamaican Donkey Corn (jackass)
Donkey Corn or Jackass Corn cookies becomes crisp when cool.
Ingredients
1/2 cup brown sugar
1 cup coconut milk
1/4 teaspoon nutmeg
1/4 teaspoon salt
1 teaspoon baking powder
1 cup all-purpose flour
Method
Combine brown sugar and coconut milk in a bowl then add salt, nutmeg, baking powder, and flour.
Knead the ingredients until dough is formed. Sprinkle a little flour on a pastry board and roll the dough fairly thin.
Cut into 2-inch squares. Bake on a greased baking tin at 375F for 10-15 minutes or less.
