Caramelized Jamaican stew pork

 

Instead of using the food browning, I caramelized 1 tbsp. brown sugar in the hot oil

Ingredients

2 lbs. pork  (I used the lean rib section of the pork) I like when my brown stewed pork has a spicy taste. And for that reason, I am using pimento, it give a mild pungency flavour
12 seeds pimento (all spice)
2 cloves garlic
2 stalk scallion & piece of fresh green thyme
1 small green hot pepper (deseeded)
1 small green sweet pepper
Salt to taste
1 tsp. balsamic vinegar
1 tsp. nut meg
1 tsp. each dried basil leaves
ground black pepper
paprika
1 tbsp. brown sugar
small piece ginger
2 tbsp. cooking oil
2 cups water {more or less}
Feel free to use the ingredients that you have.

 

Method

  1. Cut the pork in small pieces (your choice) then wash in vinegar and water solution(1tsp vinegar to 1 qt. .water) put to drain.
  2. Put the pork into a container, season with salt, basil leaves, black pepper & paprika. Cover and set aside.

Now to make the marinade

In a blender, put the ginger, sweet pepper and hot pepper, (seeds removed) pimento, scallion & thyme, nut meg, garlic and balsamic vinegar, blend until all combined and smooth. Rub this marinade all over the meat, then cover for at least 30 minutes.

3. Put a medium- size Dutch pot, over high/medium heat. Add the cooking hot. When the oil is hot, add the brown sugar, and stir using a spoon or fork until the sugar caramelized.


4. Add the seasoned pork. Stir so that the caramelized sugar is evenly distribute all over the pork. (this will give the meat the brown colour)Do not add any water, cover the pot and allow the meat to steam-cook. So after a min, stir the meat, then cover the pot without adding any water. because you want the meat to get the brown colour, that is the purpose of doing this and not adding any water as yet.

5. When the meat begins to fry, add 1 cup water, cover the pot and continued cooking the meat. when the water dissolve, add 1 more cup water and continues to cook the meat. test the meat using a folk, if the folk goes through the meat easily, then the meat is cook, if not add more water when needed and allow the meat to cook until tender.

6. As I mention before, the cooking time depends on the texture of the meat. It took less than an hour to cook my stewed pork. When the pork is almost finish cooking, adjust the taste by adding more salt if needed, you can add 1 tablespoon ketchup as well, this is optional. Simmer the meat until the water reduces to a thick rich gravy
