How to fry green plantains ---Jamaican style

Fried green plantains are crunchy, a bit salty and very addictive. Eaten best when hot. Green fried plantain is eaten mostly for breakfast or use as a side dish in Jamaica.
Ingredients
1 green fit (mature) plantain
3 tbsp. oil
Salt to sprinkle on plantain (optional)
piece of paper towel to absorb excess oil
Method

Remove the plantain skin. Cut the plantain finger into three quarters, cut each quarter into 4 or five slices; about 1/4 inch thick for each slice

Put a Dutch pot or skillet over low heat to be hot, pour in the oil, let the oil hot. When the oil becomes hot, put four pieces of plantain into the hot oil. Fry each side for 2 seconds. Then remove from the pot.

Now the plantain slices are hot so be careful, but we have to work with it hot. Put one hot plantain slice into a Ziploc bag or between two folded paper towel. Make a fist with your hand and gently press down on the plantain slice to flatten it.

After it has flattened to your desire, sprinkle small amount of salt on both sides (optional) then return it to the pot. Fry each side for 2-3 minutes over low heat, continue the steps until completed.
