Servings Guide
- Vegetables and side dishes: allow a minimum of half cup per serving
- Meat, poultry, fish roasts, stewing meat, veal shops and steaks: 1 lb. with bone serves 2, i lb. boneless serves 3
- Lamb chops, steak, spear ribs, poultry: allow 3/4 lb. per serving
- Hamburger, liver and fish: 1 lb. serve 3
- Always allow for second helpings. The quantities given are for adult portion. 1 adult portion will generally serve 2 children
Substitutes
1 whole egg | 2 yolks, or 1 tbsp. egg-based salad dressing |
1 cup brown sugar | 1 cup white sugar + 4 tbsp. molasses |
1 cup butter | 7/8 cup rendered fat or 1 cup hydrogenated fat or 7/8 cup solid-vegetable shortening + 1/2 tsp. salt |
1 cup square chocolate | 3 tbsp. coco and 1 tbsp. oil. (this makes 1 oz..of unsweetened chocolate |
1 cup corn syrup | 1 cup sugar + 1/4 cup water or other liquid called for in the recipe |
1 tbsp. flour | 1 tbsp. corn starch, or 1 tbsp. rice starch or 1 tbsp. arrowroot or 2 tbsp. potatoes or 2 tbsp. cornmeal or 2 tbsp. quick-cooking taploca |
1 cup sour milk | 1 cup sweet milk with one of the following: 1 tbsp. vinegar, or 1 tbsp. lemon juice, or 1 3/4 tbsp. cream of tartar |
1 cup cake flour | 7/8 cup all-purpose flour |

bread crumbs | use finely crushed corn flakes, or any unsweetened cereal, or crushed potato flakes, or instant mashed potatoes |
ketchup | combine 1 cup tomato sauce or mashed canned tomatoes, + 1 1/4 cups brown sugar, 2 tbsp. vinegar, 1/4 tsp. cinnamon and a dash of clove and pimento (allspice) |
