How to make Jamaican pickle
Jamaican pickle or escoveitched pickle is used as a sauce. Fried fish with pickle is called escoveitched fish. Escoveitched fish is a Jamaican favourite but the method of preparation differs from one cook to another. Pickle is use on just about anything; jerk chicken and pork, sandwiches, etc.. Note: Pickle should not be confused with the marinade sauce that served with Jamaican jerk pork and chicken. Jamaican pickle is seasonings immersed into vinegar
Ingredients
2 medium-size carrots (julienne)
2 hot peppers (make it colourful; use red, yellow or green)
1 small onion (neatly sliced)
1/4 cup white vinegar
6 pimento seeds (allspice)
Method
Neatly pack all the ingredients into a glass bottle with an air-tight cover, pour in the vinegar and cover. Keep refrigerated for a month
Method to use pickle immediately
Pour 1/4 cup vinegar into a skillet and place over medium-high flame.
Add the seasonings to the hot vinegar and and remove from heat after 1 second and pour the escoveitched sauce over fried fish, fried chicken or whatever you are preparing and serve
