Jamaican chicken vegetable soup
Chicken vegetable soup or chicken soup as it has been called in Jamaica is often cooked for dinner. Soup days in Jamaica for most people are; Friday,Saturday and Monday. However, you can boil soup any day of the week; even on Sundays
Ingredients
2 lbs. chicken or chicken quarters (cut in medium pieces, skin removed)
1 small turnip (peeled, washed, cubed or roughly sliced)
1 cho-cho, optional (peeled, washed, cubed)
2 small carrots, (peeled,washed,cubed)
1 whole green hot pepper
salt to taste
1 stalk scallion
piece of fresh green thyme
1 cock flavoured soup mix
1 lb. yellow yam, optional
2 cups. all-purpose flour
8 cups. water or more
small piece of pumpkin(peeled,washed,cubed)
1 medium Irish potato (peeled, washed, cubed)
1 small ear of corn (cleaned, washed)
Method
Put the flour into a container, add little salt, use a small amount of water and mix the flour into dough. Cover, and set aside.
Put a large pot over high flame and add 8 cups of water and the chicken, corn and vegetables, cover and cook until the vegetables soften. Add 2 cups of water if needed.
Peel the yam,wash,slice and put it in the pot continue cooking. After 10 minutes, make round ball-shaped dumplings with the dough and put them into the pot, stir.
Sift the cock soup mixed through a sieve into the pot (I want the flavour from the soup mixed and not the noodles)Add the scallion, thyme and pepper, add the salt ,stir,and cover the pot. Lower the flame and simmer the soup until it is reaches the consistency that you desire. Keep stirring every 2 minutes. Remove from heat and serve hot. Total cooking time 70 minutes
