Jamaican goat head soup or Manish water

Ingredients

2 lbs. goat head and feet

Piece of pumpkin, peeled/washed/dice

2 carrots, peeled/washed/diced

1 Irish potato, peeled/washed/diced

2 cloves garlic, crushed

few grains pimento (all spice)

Salt to taste

flour to make dumplings

piece of yellow yam (optional)

1. pk.  cock soup mixed

1 stalk scallion

1 sprig fresh green thyme

1 green hot pepper

4 cups water or more

Method

step1

Cut the goat's head and feet into small pieces. Then put into a medium-size pot and add enough water to cover it.

Put pot over medium heat, bring to a boil. Remove from heat and discard the water.

Put the goat head and feet to boil in four cups water over high heat. add few grains of pimento (all spice) and 2 cloves garlic. Boil the goat head and feet until partially cook; add water if needed

Add the pumpkin and carrot  and allow to cook for 10 minutes. Add yam and cook for 5 minutes. Add the dumpling. the scallion, thyme, hot pepper and cock soup mix (I want only the flavour, therefore, I do not add the noodle, only the flavour)Add salt. stir. Lower the flames and simmer until soup becomes thick.
