Stewed peas (red kidney beans) with pig’s tail
Ingredients
1 cup coconut milk
1 cup red peas (red kidney beans)
4 cups water
1 lb. pig's tail, cut into small pieces
few pimento seeds (all spice)
salt, optional
1 green hot pepper
1 stalk scallion
1 sprig fresh green thyme
2 cloves garlic
Method
step1
Remove excess salt from the pig's tail by boiling in water over high flames for 2 minutes (repeat the steps twice)

In a medium-size pot, add the peas, pig's tail and garlic. Cover pot and cook until tender, add more water if needed.

When the pig's tail is partially cook, add the coconut milk, scallion,thyme, hot pepper, add salt if needed. Stir, lower the flame and simmer until sauce thickened. Remove from heat and served, best with steamed white rice
