Jamaican French fried chicken recipe

This is Jamaican French fried chicken, ideal with rice or bread
3 lb. chicken
1/2 cup flour or bread crumbs or corn flakes
Enough oil for frying
1 green hot (optional)
1 tsp. black pepper
1 tsp. salt
1 peg garlic (crushed)
1 tsp. garlic powder
1 tsp. paprika
1 tsp. chili powder
2 beaten eggs (optional)
1 clove garlic
2 tsp. baking powder
Method
step1
Cut chicken into medium sizes, wash with vinegar or lime then put to drain. Season chicken with the dry ingredients, cover and marinate for 30 minutes

Mix together, flour and baking powder in a small bowl and eggs in separate bowl. Place pieces of chicken in the flour mixture then egg mixture; make sure chicken is cover in flour mixture, then shake excess flour off chicken pieces before dipping in egg mixture.

Place a skillet or Dutch pot over high heat and allow to hot. Pour in enough cooking oil into the hot oil. Add the garlic clove and green hot pepper (the garlic clove and pepper should remain in the pot while frying the chicken pieces)

Lower the flames, put chicken pieces into the hot oil (the amount depends on the size pot) cover the pot and allow the chicken to steam fry at the same time. Fry each side until brown. Continue the steps until finish.
It’s best to place fried chicken on hand towel. It helps to get rid of excess oil. Add some tomato ketchup to the fried chicken if desire
