Bread-the staff of life. Here is a quick and simple cheese bread recipe, Jamaican style. Watch video here
ingredients
2 cups all-purpose flour
4 tbsp. baking powder
1 tsp. salt
1 cup mild Cheddar cheese (grated)
2 eggs
1 cup milk
1/4 cup vegetable oil
To the ingredients, you can add 1 tbsp. granulated sugar (optional) I did not use any sugar. It is best to add the salt last to prevent over salting of the bread
Method
Preheat oven to 350F or 174 C. Grease with butter a 9x5-inch (23x13) loaf pan. Set aside
step1
In a bowl, sift the flour, baking powder and sugar if using. Fold in the Cheddar cheese. Make a well in the centre. Set aside
step2
In a second bowl, beat the eggs. Fold in milk and oil, while whisking constantly. Pour the egg, milk and oil mixture into the centre of the well
step3
With a spatula, gently glide the flour towards the centre of the bowl. Mix with a wooden spoon, or use what you have. Do not knead the dough. Add the salt, although the recipe calls for 1 tsp. salt. However, add a little at a time while tasting the dough to prevent over salting the bread. Pour the dough into the greased loaf pan then cover with wax paper and let it stand for 20 minutes.
step4
Bake in the oven for 50-60 minutes. Serve hot, cold or toasted
Variations
Use aged Cheddar cheese or Swiss cheese
