Breadfruit Salad Recipe
On February 5, 1793, his ship, The HMS Providence, landed in Jamaica, stopping first at Port Royal and moving on to Port Morant where some of the trees were unloaded and planted at the Bath Botanic Garden where some of the trees remain today.Today, the breadfruit tree can be found all over Jamaica and enjoys strong ties to Caribbean cuisine. A part from making salad, breadfruit is also boiled, baked and roasted
Ingredients
1 medium-size boiling breadfruit, peeled/washed/cut into cubes
1/2 cup cooked string beans
1/2 cup carrots, scraped/washed/diced/cooked
4 tbsp. mayonnaise
1 canned sweet corn, drained
Salt to taste
1/2 tsp. black pepper
1/2 tsp. all-purpose seasoning
You can use 1 canned of mixed vegetables instead of the string beans, carrots, and
sweet corn; that's what I did.
You can use cock flavoured soup mix if you want a 'somewhat' spicy taste
Method

Put a medium-size pot over medium-high heat with 10 cups of water, add salt to
taste, cover and bring to a boil. Add breadfruit cubes and boil until cooked (tender)
If use the flavoured cock soup mix; put 10 cups of water into the pot, put the pot
over medium-high heat, pour the cock flavoured soup mix into a sieve to separate
the flavour from the noodle, add the flavour to the pot and discard the noodle. Cover
pot and bring to a boil.Do not add any salt, add breadfruit cubes and boil until
cooked.

Drain off the water and put the cooked breadfruit cubes into a large bowl, set aside
to be cool.

Mash the breadfruit cubes, using a fork or a potato masher. Adjust the taste by
adding salt if needed. Sprinkle on the black pepper and all-purpose seasonings.
Gently fold in the mixed vegetables. Add the mayonnaise.
Keep in the refrigerator until ready to serve. Breadfruit salad is easily spoil; even
when kept in the refrigerator, therefore, it is best to use all of it or throw away the leftover
If using the string beans and carrots.
Cook the string beans and carrots together, in a pot with salted water over medium
heat until soft, drain off water then set aside to be cool, next, fold in the string beans
and carrots in the mashed breadfruit, then follow the rest of the instructions.
Variation
Use 1/2 cup grated Mozzarella cheese to tun (enhanced) up the taste
