Jamaican Cherry Pudding Recipe

Cherry will be in season soon, in Jamaica. In the meantime, feast on this Jamaican cherry pudding. Try this Jamaican cherry juice drinks

2 cups all-purpose flour
1 cup brown sugar
1 tsp. baking powder
1/2 tsp. salt
3 tbsp. butter or margarine
2 eggs
1 cup cherry juice
2 tsp. vanilla essence
2 tbsp. food browning (optional)
1 tsp. mixed spice
Add the eggs, sugar and vanilla into a bowl and cream for 3 minutes on high speed. Add the butter or margarine, food browning and vanilla little by little while whipping.
In another bowl, sift flour, salt, baking powder, and mixed spice. Add to the mixing bowl,alternating with the cherry juice. Whip for a minute to combine all the ingredients
Scrape batter into a greased baking tin (line bottom with paper) Use a spatula to smooth the top of the batter.
Bake pudding in a preheated oven at 350 degrees F  or 125 C for 40-45 minutes. For a moist pudding,place a container with water in oven while baking the pudding. Cool completely before serving. Garnish with cherry sauce and one cherry (optional)
