Rum and Raisin Cake Recipe
This is not authentic Jamaican recipe, however, the shortcut methods are original fi mi (mine) Yes, you read correctly. I have been keeping it tucked away in the ‘tweak’ recipes’ vault. My grandmother is a retired registered dietician. Therefore, I learnt from the best. This is the shortcut method of baking rum and raisin cake. This method is ideal for people like myself who cannot bake a decent looking cake from scratch and also for busy people like me who wants to zip zap out of the kitchen.
Ingredients
1 box of yellow cake mix (your favourite brand)
2 tbsp. Jamaica white overproof rum (use your brand if you want)
1/4 cup raisins
Method
How to mix the batter, follow the instruction written on the cake mix box.
To get the full flavour from raisins do this before adding to cake batter.
To the batter, add the rum, fold in the raisins, gently stir. Pour batter into a greased/floured baking tin. Follow the instruction on the cake box for baking time. That’s basically it, quick and easy.
