Jamaican curry pork recipe

Jamaican curry pork

Curry pork is one of the different methods of preparing pork. Caramelized Jamaican stew pork recipe

Ingredients

2 lbs.. lean pork, cut in serving sizes, washed with vinegar and water or lime and water solution, drained

1 tbsp. ground black pepper

2 tbsp. Indian curry

1 tsp. salt

Piece of ginger, crushed or 1 tbsp. powdered ginger

1 clove garlic, crushed

1 stalk scallion, chopped

Piece of thyme

2 slices hot pepper

1 small onion, chopped

1 tsp. dried basil leaves

6 pimento seeds, crushed (allspice)

1 tbsp. oregano

2 cups of water

2 tbsp. coconut oil

Method

step1

Wash pork and cut into medium-small pieces then add the onion, thyme, salt, pimento seeds and garlic to pork. In a another container.

In another bowl mix all the other seasonings, except curry then pour it over the pork in the bowl. Use hand to combine all ingredients together then cover to marinate in the refrigerator for 30 minutes or overnight.

Heat oil in a saucepan or Dutch pot on high heat. Add the curry, cook the curry in the hot oil for 2 seconds. Add the seasoned pork, cover the pot, cook the pork without adding water. When the pork begins to fry add 1 cup water. Cover the pot and continue cooking the pork until tender and liquid reduces to gravy. Remove from heat and serve with your favourite food.

Note: the cooking time depends on the texture of the pork.
