Jamaican Green Banana porridge Recipe
A bowl of hot steamy green banana porridge to kick start your day. Porridge is a favourite breakfast option for many Jamaicans. Children love it, and it is ideal for babies six months-old and older. Jamaican hominy porridge, or if you rather creamy rice porridge, or cornmeal porridge
Ingredients
6 fingers green bananas/peeled/cut each banana finger into 4 to 5 pieces
1/2 cup coconut milk
6 tbsp. skimmed milk powder or 1/2 cup Evaporated milk
Salt (taste porridge and add salt)
2 cups water
Sweetened condensed milk (the amount is up to you)
4 cinnamon leaves or 1 cinnamon stick
1/2 tsp. grated nutmeg
1 tsp. vanilla flavouring
1 tbsp. cornstarch dissolved in 2 tbsp. water
Method
Step1
Put a medium-size pot with 1 cup water on high heat. Wash add the cinnamon leaves or stick, cover and boil for 2 minutes

In a blender, blender the bananas until smooth. Add the blended banana mixture in the pot. Stir, lower the heat. Simmer the porridge for 10minutes, add the coconut milk and cornstarch. Simmer the porridge for 15 minutes, while stirring every 5 minutes (keep the pot uncovered to avoid spillage)
Step3
Mix skimmed milk powder with a small amount of water. Add it to the pot, stir. Sweeten with the sweetened condensed milk, add the salt. Add the vanilla and nutmeg, stir and remove from heat. Serve hot. Serve 3 to 4 persons
Home-made porridge is wholesome. It has three times the amount of nutrients when compared to other packaged cereals, which are sometimes processed and contains a lot of sugar
Childhood favourite; licking skimmed milk powder mixed with sugar.
