Jamaican green bananas dumplings Recipe

Ingredients
4 finger green bananas, peeled/cut into small pieces
2 cups all-purpose flour, sifted
1/2 tsp. salt
4 cups water
1 tsp. salt
1/4 cup of water, or less
Method

Grate the bananas using a grater (I am using the Jamaican traditional old-fashioned grater). Green banana porridge
Sift the flour into the bowl with the grated green bananas. Add the 1/2 tsp. salt, use your hand to mix and combine the flour and grated bananas together. Use the 1/4 cup of water to mix the floor into dough. Cover and set aside.

Put a medium-size stock pot on high heat with 4 cups of water. Add the 1 tsp. of salt. Cover the pot and bring to a boil.

Pinch off a small piece of dough and roll in a ball shape, use the side of your hand to slightly flatten the top.

Put the dumplings into the pot with the boiling water. Use a spoon to gentle stir the dumplings; this is to prevent them from sticking on each other and to the pot bottom. Cover the pot and cook the dumplings for 10 minutes. Remove the pot from heat after 10 minutes. serve with your choice saltin (meat)
Note: White flour dumplings take 5 minutes to cooked. Cornmeal dumplings take about the same time as green bananas, which is 10 minutes.
