How to fry ripe plantains

Ripe plantain is fried or cook in Jamaica. Fried ripe plantain is eaten mostly for breakfast, either with fried egg and bread or fried dumplings. It is also used as a side dish, it compliments curry meat, for example, curry chicken or curry goat meat. Fried ripe plantains are delicious just by itself.
It is best to use ripe solid plantains and not the overripe ones.
Ingredients
1 finger ripe plantain (large)
4 tbsp. Olive oil
Method
Step1
Remove the plantain skin. Cut the plantain finger into 3 quarters, cut each quarter into 4 0r 5 pieces; about 1/4 inch thick for each slice.
There is no standardize methods of cutting the plantain finger. Therefore, you can cut into wedges or horizontal or cross cut but keep the thickness about a 1/4 inch.
Step2
Put a skillet or Dutch pot with the oil over low heat to be hot. Put 5 or 6 pieces of plantain into the hot oil. Fry each side for 2 minutes. Continue until completed. Best when eaten hot or warm.
