Jamaican Fried Festival Recipe
April 7, 2015
Festivals goes well with fried fish. However, there are no rules as to what it can be eaten with. This is my version. Recipe for Jamaican mango fried festival
Ingredients
1 1/2 cups all-purpose flour
1/2 cup refined cornmeal
1 tbsp. baking powder
1/2 tsp. salt
2 tbsp. brown sugar
1 tbsp. butter or margarine (softened at room temperature)
3/4 cup cold milk (or less)
Enough oil for frying
Method
step1
Sift flour, cornmeal, baking powder and salt together into a medium-size bowl. Add the sugar. Make a well in the centre. Pour in some of the milk, with a spatula, gently glide flour into water.
step2
With hands, knead 4-5 times until dough is smooth and no longer sticks to hands. Cover with plastic wrap for 15 minutes (optional, but best method).
step3
Put a skillet or Dutch pot over low heat with oil to hot. Pinch off a piece of the dough and roll into long shape. Depending on the size of the pot, fry about seven or so. Fry each side for about 1 1/2. Drain on paper towel. Best when hot or warm
