Jamaican Rock Cakes Recipes

Rock cakes are very easy to make. Rock cakes originated in Great Britain. Rock cakes are extremely popular in Jamaica. The Jamaican rock cakes ingredients are very similar  to the British recipe. Rock cakes use fewer eggs and sugar than other pastries. Jamaican coconut macaroon recipe

Ingredients

1 cup all-purpose flour, sifted (how to measure)

1 tsp. baking powder

1/2 cup raisins (how to get the full flavour from raisins)

1/2 cup shredded coconut

1 L. egg

2 tbsp. milk

1/2 tsp. salt

Method

Step 1: Mix The Dry Ingredients

In a large bowl, put flour, baking powder,  and  margarine or butter. Rub the butter in lightly  using your finger tips until it looks like fine breadcrumbs.

Wash your hands. In a small bowl, mix milk, egg and vanilla extract, make a well in the middle of the dry ingredients and pour the egg mixture in, then stir together using a spoon, until the mixture becomes a bit sticky and lumpy.

Place a large spoonful of the mixture on a lined baking sheet, keep them a little distance apart and then put into a preheated oven for 15 -- 20 minutes  at 200C or 390F until golden brown. Cool on a rack before eating.
