Honey glazed baby carrots Recipe

Carrots are especially rich in vitamin A. This vitamin helps to maintain your night vision; recent studies show that it is also helpful in preventing certain types of cancer.

This recipe is not authentic Jamaican.

Make 4 servings


16 spring baby carrots

1 tbsp. butter

1 tbsp. honey

salt and pepper

16 small parsley sprigs



Brush carrots. Remove stems.


In a saucepan filled with lightly-salted boiling water, blanch carrots for 4 minutes. Drain and set aside.


In a frying pan, melt butter. Cook carrots for 2 minutes. Add honey, season with salt and pepper. While stirring, continue cooking until carrots are well-coated with melted honey.


Divide carrots among 4 plates. Garnish with parsley sprigs. Serve.
