How to deboned and stuffed chicken legs

Deboning a chicken leg is easier than it seems. Simply follow these step-by-step instructions.
- Pull back the chicken skin by inserting fingers between the skin and flesh and pulling it back to tip of the drumstick.
- With a sharp knife, cut through the bone just above he drumstick
- Slice meat off bone and remove tendons
- Mince meat and prepare stuffing. With a pastry bag with nozzle attachment, stuff chicken skin; make sure to push stuffing deep into skin pocket
- Fold excess skin and tuck it under the leg
- Wrap in heat-proof plastic and tie.
- Stuffed chicken leg is ready to cook
