Peanut butter muffins are not an authentic Jamaican recipe. These peanut butter muffins are perfect for an afternoon snack when you need an energy boost. Easy peanut butter recipe.
10 2⁄3 oz. all-purpose flour
5 1⁄3 oz. brown sugar
½ oz. baking powder
3 ½ oz. sunflower oil
2 medium-size eggs
5 1⁄3 oz. milk
4 ¼ oz. peanut butter
Pre-heat your oven to 190C.
Sift the flour, baking powder and the sugar into a bowl and mix. Add the eggs to the oil and whisk lightly. Add the milk and mix again.
Add the wet ingredients and the peanut butter to the dry ingredients, and gently mix until everything is well combined.
Divide the mixture between 12 muffin cases, filling each one approximately 3/4 full. Bake for about 16 minutes until golden brown and well risen. When they are ready they will spring back when you press them. Leave the muffins for 30 minutes to cool before eating them.
