Tis the season to eat pumpkin! No mon, Jamaicans nyam pumpkin all the time. My cream of  pumpkin soup is low in calories and high in deliciousness. Explore more soups recipes

I eat bread just as it is, no jam, no margarine, etc..

1 lb. pumpkin, peeled, cut into large chunks

2/3 cup coconut milk

1/8 tsp. salt (or more)

6 cups water

1 pk. cock soup mix with pumpkin

1 stalk scallion, chopped

Piece of fresh thyme

1/2 of 1 large onion, sliced, rings separated

1 whole green Scotch Bonnet pepper

Step 1

In a medium-size pot, add 6 cups water and salt. Bring to a boil over high heat. Add pumpkin chunks, scallion , onion, thyme, and hot pepper. Cover pot and cook pumpkin until soft. Remove from heat and set aside. Remove and discard the  cooked scallion, thyme, onion and hot pepper from the pot. Reserve the water


In a blender, add the reserved water and pumpkin, blend until well smooth. Return the pumpkin puree into the pot. Put the pot on low heat. add the coconut milk, stir. Add the cock soup mix  (pass it through a sieve) . Stir. Taste and add more salt if needed. Simmer soup for 2 minutes, remove from heat and serve warm or hot.
