Fried Canned Sardines and Franks

Fried sardine and Frankfurter for breakfast are one of my favourite breakfast dishes. This is not a traditional Jamaican breakfast. It is more based on personal preferences where I used two different items, combined together to make one delicious dish for breakfast. To go along with the fried sardine and frankfurter, fried dumplings; best served hot and fried ripe plantain. I used canned sardine. Fried canned sardine and frankfurter are also ideal with bread or biscuit.

1 canned sardine, drained
2 frankfurters (normal size) cut-up
1 stalk scallion, cut up
2 slices onion
2 slices hot pepper, seeds removed
1 tsp. vegetable oil
1/2 tsp. black pepper
1 tbsp. ketchup
A small piece of fresh thyme

Put a skillet or a small pot on medium/low heat with the oil. Sauté the seasonings into the hot oil until translucent. Add the sardine, use a spoon to break up the sardines. Add the frankfurter, black pepper and ketchup. Stir, lower the heat, cover the pot and simmer for one minute. Remove from heat, best served hot or warm.
