Teriyaki Chicken Recipe
Japanese inspired Jamaican-style teriyaki chicken. The teriyaki sauce is made with soy sauce, and rice wine. Dry sherry can be used as a substitute.
No fanciness, just simple home cooking chicken teriyaki
Ingredients
3 pieces of chicken (skin removed)
4 tbsp. coconut oil
1 tsp. ground black pepper
1/4 cup rice wine or dry Sherry
1/4 cup. soy sauce
2 tbsp. dark brown sugar
Pinch of salt
Optional
Slices of hot pepper and onion
1 clove garlic, crushed
Baked teriyaki chicken
Instructions
1. Remove the skin from the chicken pieces. Trim away and discard any large pieces of fat.
2. Wash chicken pieces. Place chicken pieces into a bowl and season with salt and black pepper.
3. Into a container, mix together, soy sauce, sugar and rice wine. Marinate the chicken in mixture of rice wine, soy sauce and sugar for 30 minutes or best overnight.
4.Heat oil in a heavy bottomed skillet or Dutch pot over medium heat. When hot, add the chicken pieces. Fry until brown on both sides (3 to 4 minutes per side)
5.Remove browned chicken pieces from pot. Pour off any oil from the pot and return to stove over high heat.
6. Return the chicken pieces to the pot and add the sauce, sliced onion, garlic and hot pepper. Cover and cook until sauce starts to caramelize.Remove from stove and serve.
