This carrot cake is soft, moist and fluffy and easy to make. This carrot cake calls for simple ingredients that you will probably already have at home. I do not eat icing, but I will post the recipe of how to make icing that you can spread over the carrot cake top. Recipe will be up soon on YouTube channel. This carrot cake is not sweet but if you like sweet cakes use more sugar
1 1/4 cups finely grated carrots
1/2 cup brown sugar
1/2 cup oil (I used vegetable oil)
1 1/2 cups all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. mixed spiced
1/2 tsp. vanilla extract or 1 tsp. vanilla flavouring
1/4 cup raisins
Preheat oven to 350 F or 175 C . Butter a 8-inch cake pan
In a bowl, Mix eggs, sugar and oil with a hand mixer (For about 2 minutes). Set aside
In a second bowl, sift dry ingredients then add to the wet ingredients, stir to combine.
Fold in carrot and raisins then pour into baking pan.
Bake in a preheated oven for 30-35 minutes. Remove from oven and let cake cool before slicing.
Recipe for icing (if using)
1/4 cup butter
1/2 cup cream cheese, softened
1/2 tsp. vanilla
2 1/2 cups icing sugar
In a bowl, mix all ingredients. Whip until smooth. Spread over cooled carrot cake
