Fricassee chicken Jamaican style

Fricassee chicken is not brown stewed chicken. Fricassee chicken is the most popular way of cooking chicken in Jamaica and is usually eaten with rice and peas for Sunday dinner.
I cook traditional Jamaican food because it's the best and the sweetest, these nowadays shorthand ways of preparing food are not the best way, and the food is tasteless and lacks flavour and the authentic flavour of the Jamaican cuisine.
Put chicken into a container and season with the following:
Ingredients:
1 tsp. paprika
1 tsp. ground black pepper
1 tsp. salt
1 tsp. Maggie chicken season
1 tsp. Maggie all purpose
1 tsp. Island jerk seasoning
1 tsp. Island Spice Red Pepper Cayena
1 tbsp. ketchup
1 cook water
1/4 cup vegetable oil
Season chicken with these herbs and spices:
1 stalk scallion, chopped
1 sprig thyme, chopped
Few slices hot pepper
1 tomato, sliced
1 clove garlic, crushed
1 small onion, sliced

Instructions
Put a Dutch pot or skillet with the oil to hot over medium heat. Remove the seasoning from the chicken pieces.Lower the heat (between medium/low) Put 3-4 pieces of chicken in the hot oil (depending on the size pot). Cover the pot and fry each side of the chicken until lightly brown (about 3-4 minutes, each side)
Remove fried chicken pieces from the pot and put into a container. Continue the steps until all the chicken pieces have been fried.
Pour off the oil, leaving just a tiny amount in the pot. Add the water to the pot, add the seasonings. Turn up the heat to medium, cover the pot and cook the seasonings for 5 minutes. Add ketchup. Taste and add more salt if needed. Cover pot and continue to simmer for another 4 minutes or so.
Put the fried chicken pieces in the pot. Spoon over the sauce on the chicken pieces. Cover the pot and simmer until the liquid is reduce to gravy (5 minutes or so) Remove from heat and serve with your favourite food
