Curry pork Jamaican style

Delicious pork curry recipe.
I do not like the curry that I used because it makes the meat looks too dark when it is cooked, nevertheless, the curried pork is delicious.

2 lbs. pork ribs (use any cuts of the pork)
1 tsp. of the following:
Black pepper
Dry jerk season
Ground tarragon
1 tsp. fresh ginger root, peeled crushed
Few seeds pimento, crushed
2 cloves garlic, crushed
Piece of thyme
1 stalk escallion
1 small onion
1 Scotch Bonnet pepper
1 small sweet pepper
2 medium-size Irish potatoes, peeled, washed, cut into the size that you want.
3 cups water {it can be more or less for you because the cooking time depends on the texture of the pork)
2 tsp. vegetable oil

Wash pork with vinegar and water solution, drained

In a bowl, season pork with all the ingredients, except for the oil and curry

Put a big enough pot on low heat, add the oil and curry. Cook curry into the hot oil for about 30-40 seconds. Add the seasoned pork, stir to combine with the curry.

Add 2 cups of water. Turn heat to medium or high. Cover pot and cook pork until water reduces.

Test if the pork is cook by using a fork to insert into the pork. If the fork goes through easily the meat is cooked, if not, add 1 more cup of water and the Irish potatoes. Adjust the taste by adding more salt if needed. Lower heat and simmer until gravy thickens
