The real Jamaican foil roasted fish on stove top

This is the real authentic Jamaican foil roasted fish on stove top. This is how we in Jamaica roast fish. The stuffing is made with, cock soup mix, butter, escallion and hot pepper.

In Jamaica, we use a roasting pan made specifically to roast fish. However, I roasted the fish on the stove top for the benefits of those who do not have a fish roasting pan.

I used Grunt fish because they are hard nature. The fish are scraped.

Cut the back of each fish to remove the intestines and gills then wash with vinegar and water solution. Drain.

Make stuffing (filling) to put inside the fish. This amount of stuffing is for eight fish. However, I will only do two fish in this post


1 stalk escallion, minced

1 Scotch bonnet or any hot pepper of your choice, minced

1 cock soup mix

1 stick butter
